Chicken Salad - Trish J, Athens

Use: croissant or pita sandwich or by itself*

 2 cups cooked chicken, cubed                    1 cup sliced celery
1 ½ cups red grapes halved                           or ½ cup sunflower seeds
1 cup green grapes halved                          ½ cup sliced almonds

Dressing

¼ cup mayonnaise                                        1 ½ tsp sugar
¼ cup sour cream                                         ½ tsp ground ginger
1 tbs. Lemon juice                                         ¼ tsp salt
1 tsp grated lemon peel

You can use the canned chicken or Tyson frozen chicken already cubed if wanted.

*use celery for this recipe

 

Chicken Broccoli Oriental - Trish J, Athens

 

1 tbsp vegetable oil                                      1 can cream of broccoli soup
1 lb boneless chicken thighs,                       3 tbsp water
       cut into strips                                          1 tbsp soy sauce
1 small onion, chopped or 1” squares        2 pkg. (3 oz each) chicken flavor Ramen noodle soup
1 medium green or sweet red pepper,                                                   
    cut into 1” squares

 Cook chicken in hot oil until browned.  Add onion and pepper, cook till tender-crisp.

Stir in soup, water and soy sauce.  Heat to boiling.  Reduce heat to low, cover, simmer 5 min or until vegetables are tender.

Prepare ramen noodle soup according to package directions, add seasoning packet, drain noodles.  Serve chicken over noodles.
